Growing Tea on a Volcano: Kagoshima's Shirasu Soil
Shirasu is volcanic ash that drains too fast for most crops. Here is why tea does well on it, and how Kagoshima's ground shapes what ends up in the bowl.
The short version: Shirasu is the loose volcanic ash that an enormous eruption dumped across southern Kyushu about 30,000 years ago, and it is genuinely poor farmland. It drains too fast, holds almost no water, and locks up phosphorus that plants need. That is exactly why it was still available when tea arrived. Tea wants acidic, fast-draining ground and hates wet feet, so the traits that made Shirasu useless for rice make it workable for tea. The soil does not put flavor in your bowl on its own — cultivar and craft do most of that work. But it shapes the roots, the field, and the farming, and those shape everything after.
What is Shirasu, exactly?
Around 30,000 years ago, the Aira caldera — the drowned crater that forms the northern half of Kagoshima Bay — erupted on a scale that is difficult to picture. Pyroclastic flows swept across southern Kyushu and settled into a pale, pumice-rich blanket. Japanese calls it shirasu, white sand.
The layer is not thin. Across the plateau it runs tens of meters, and in places more than 100 meters deep. Roads cut through it reveal a cliff face the color of bone.
Sakurajima, the active cone that sits inside that same caldera system, has spent the intervening millennia topping it up. It has erupted more or less continuously since 1955. In 1914 it produced enough lava to fill the strait on its eastern side and permanently join what had been an island to the Osumi Peninsula. The ground here is not a historical artifact. It is still being made.
Why is volcanic ash such difficult farmland?
Because it fails at the two things soil is supposed to do: hold water and hold nutrients.
Shirasu is coarse and structureless. Rain moves through it rather than staying in it, and dissolved nutrients leave with the water. Volcanic soils of this type — andosols, in the technical vocabulary — also contain clay minerals that bind phosphorus tightly enough that plants struggle to take it back up. A farmer can add phosphate and watch the soil quietly absorb most of it.
Add the erosion problem. Loose ash on a slope moves in heavy rain, and southern Kyushu gets a great deal of heavy rain, plus typhoons.
This is the honest history of the region, and it is more interesting than a marketing story about mineral-rich volcanic soil. For centuries the Shirasu plateau was the ground nobody wanted. The good alluvial land went to rice. What was left went to sweet potato, to livestock feed, and eventually — once shading and processing knowledge traveled south from Uji — to tea.
So why does tea do well on it?
Because tea's requirements are close to the inverse of the problem.
Camellia sinensis prefers acidic ground, roughly pH 4.5 to 5.5, and volcanic soils in this region are naturally acidic without amendment. More importantly, tea will not tolerate standing water around its roots — waterlogging is one of the reliable ways to kill a tea plant. Shirasu makes waterlogging almost impossible. The failure mode that ruins tea fields elsewhere is the one thing this ground cannot do.
There is a second, subtler effect. A plant that has to send roots down through loose, dry material to find moisture develops differently from one sitting in a saturated bed. Tea in Kagoshima roots deep. Growers here will tell you that deep-rooted bushes carry a dry summer better and come back more evenly the following spring.
We should be careful about what that means for taste. There is no clean study showing that volcanic soil produces measurably better matcha, and any brand claiming a straight line from ash to flavor is inventing one. What the ground reliably determines is the health and consistency of the plant. Flavor is decided later — by cultivar, by how long the field stays shaded, by whether the leaf becomes tencha properly, and by how recently it was milled.
What does the plateau's shape make possible?
This may matter more than the chemistry.
Shirasu deposits form wide, flat tablelands. Uji's tea grows in a river valley on small sloped plots, some of it still hand-plucked, and there is no more of it to be had. Kagoshima's plateau allows large contiguous fields.
Flat and contiguous is not just a yield story. It is what makes mechanized shading and harvesting practical, and it is what makes organic certification realistic. A single grower with one large block controls what happens on every side of the crop. A patchwork of small neighboring plots does not — one conventional neighbor complicates certification for everyone downwind. That is a large part of why Kagoshima holds Japan's largest share of certified-organic tea acreage, and why Kagoshima and Shizuoka together account for roughly two-thirds of Japan's tea by volume.
The southern latitude does the rest. At about 31.6° north, first flush can begin in early April — weeks ahead of Kyoto — and the growing season runs long at both ends. We compared the two regions in detail in Kagoshima vs Uji.
Do farmers actually have to deal with the volcano?
Constantly, and unromantically.
Ash fall is a scheduled inconvenience in Kagoshima the way snow is in Chicago. There are municipal collection bags for it. Cars carry brushes. In an active year Sakurajima can produce several hundred explosive events, and growers plan field work around the prevailing wind.
Elevation and distance change the picture. Our retail leaf comes from the Kirishima highlands, roughly 40 kilometers north of the cone, where morning cloud and cooler nights do the shading work that river fog does in Uji, and where the heaviest ash rarely reaches. The relationship with the volcano there is geological rather than daily: it built the ground, and it stays on the horizon.
What does this mean for what is in your cup?
We source from Kagoshima in two forms, with two different jobs.
For cafés, we hold certified-organic Kagoshima tencha as whole leaf and mill it after the order is placed, to around 20 microns, single-cultivar Yutakamidori — so a bar's drinks taste the same in March as in October. The wholesale details are on our wholesale page.
For the retail tin, it is a second-harvest organic matcha from a single farm in the Kirishima highlands, stone-milled in small lots, with the harvest date and lot number printed on every tin. Second harvest is a deliberate choice: the long warm southern season gives that flush more body, which is what you want in a bowl that will meet milk.

The part worth keeping is this. Nobody chose this ground because it was excellent. They chose it because it was what was left, and then spent generations learning what would grow in it. That is a more useful story than mineral-rich volcanic soil, and it happens to be true.
