Kagoshima vs Uji: How Japan's Two Matcha Regions Differ

Uji wrote the method. Kagoshima grows the acreage. Latitude, cultivar, and terrain explain why matcha from Japan's two great tea regions tastes different.

The short version: Uji, just south of Kyoto, is where matcha as we know it was worked out — shaded fields, unrolled tencha, stone mills, the whisked bowl. Kagoshima, at the southern end of Kyushu, is where a great deal of Japan's tea now actually grows, on volcanic ground, with the country's largest concentration of certified-organic acreage. The gap between them is about 370 kilometers of latitude, and that distance shows up in everything downstream: when the leaf is picked, which cultivars survive there, how the fields are shaped, and what ends up in the bowl. Uji tends deep and savory. Kagoshima tends bright and aromatic. Both regions make superb matcha, and neither fact about geography will tell you as much as a milling date will.

Where are Uji and Kagoshima, and why does the distance matter?

Uji sits at roughly 34.9° north, in a river valley between Kyoto and Nara. Kagoshima sits at roughly 31.6° north, in the shadow of an active volcano. Three degrees of latitude sounds trivial on a map and is not remotely trivial in a tea field.

The practical consequence is the calendar. In Kagoshima, the first flush can begin in early April; in Uji, picking usually starts in early May. A month is a long time in a crop that is defined by the tenderness of new growth. It also means Kagoshima's later harvests get more warm growing days behind them than the same flush would receive further north — one of the reasons a southern second flush behaves differently from a northern one.

Mist matters as much as warmth. Uji's river fog moderates spring sun naturally, which is part of why shading took hold there. Kagoshima gets its own version from the Kirishima highlands, where elevation and morning cloud do similar work.

What did Uji actually invent?

Nearly all of it. Tea seed arrived in Japan from Song China at the end of the 12th century, and by the 14th century the gardens around Uji had shogunal patronage and a reputation that never left. By the 16th century Uji farmers were covering their fields before harvest — the practice we now call shading — and refining the leaf that becomes matcha rather than the leaf you steep.

That lineage is not marketing. Every producer in Japan, Kagoshima included, is working inside a method Uji established: roughly twenty days under cover, steamed within hours, dried flat and never rolled, deveined down to leaf flesh, then milled. What Uji has less of is land. Kyoto Prefecture grows only a few percent of Japan's tea by volume. Its plots are small, sloped, and expensive, and much of the best is still hand-plucked. Scarcity there is structural, not a story someone made up.

What makes Kagoshima's ground different?

Ash, mostly. The Shirasu plateau is built from pyroclastic deposits laid down by an enormous eruption around 30,000 years ago, and Sakurajima has kept topping it up ever since. Shirasu drains fast and holds little — miserable ground for most agriculture, which is precisely why it stayed available while better soil went to rice.

Tea has different requirements. It wants acidic, well-drained ground and hates standing water, and the roots of a plant that has to work for moisture behave differently from one that does not. The wider case for the terroir is in our guide to Kagoshima matcha.

The plateau's other gift is shape. It is flat and it is wide, which permits large contiguous fields where Uji's valleys permit only terraces. Flat fields can be worked with machinery, managed at scale, and — this is the part that surprises people — certified organic far more practically than a patchwork of small neighboring plots can be. Kagoshima and Shizuoka together account for roughly two-thirds of Japan's tea by volume, and Kagoshima holds Japan's largest share of certified-organic tea acreage.

Do the two regions grow the same plant?

Same species, different cultivars, and this is where the taste difference is really decided.

Uji's tencha fields still run on the classic names — Samidori, Asahi, Gokou, Ujihikari — cultivars selected over generations specifically for shaded, ground-and-whisked tea. They are slow, fussy, low-yielding, and they produce the dense savory character that people mean when they say a matcha tastes "traditional."

Kagoshima's fields are led by Yutakamidori, bred for a warm southern climate and early budding, alongside Saemidori and Asatsuyu. Sweeter, greener, more aromatic on the nose, with less of the heavy umami weight and less astringency to manage. It is not a lesser palette. It is a different one — and its aromatic, high-note character is a large part of why Kagoshima leaf reads so clearly through milk.

So does one region make better matcha than the other?

No, and anyone selling you that answer is selling you a prefecture instead of a tea.

Both regions produce matcha at the very top of the market. Both produce a great deal that is unremarkable. The variables that actually separate a good bowl from a dull one are the ones no region name captures: which flush the leaf came from, whether the sorting removed the stems and veins properly, how much heat the mill put into the powder, and how many weeks have passed since it was ground. Grade words don't capture those either, which is the argument in ceremonial vs culinary matcha.

There is one more wrinkle worth knowing. Under the trade's own regional standard, matcha can be labeled Uji matcha if it is processed in the Kyoto area from leaf grown across Kyoto, Nara, Shiga, or Mie. That is a legitimate convention with centuries behind it — but it means the name on the tin describes a processing tradition, not a single hillside.

Which one is in your bowl?

For the retail tin, it is a second-harvest organic matcha from a single farm in the Kirishima highlands, stone-milled in small lots and nitrogen-flushed at packing, with the harvest date and lot number printed on every tin. Second harvest is a deliberate choice, not a compromise: the southern latitude gives that flush a long warm run, and the resulting cup carries more body through milk than a delicate first flush does.

If you have only ever had matcha from one region, the useful experiment is not to pick a winner. It is to taste them side by side, at the same water temperature, and notice how much of what you thought was "matcha flavor" was really a cultivar and a latitude.
